Kokotte is a restaurant incubator run by hub.brussels , designed to help aspiring restaurateurs test their culinary and hospitality concepts in a real-world setting for five months, with minimal risk and lower cost. Located in small, fully equipped restaurants in Brussels, the incubator offers a turnkey space (dining area and professional kitchen). Participants receive up to 60 hours of personalized coaching from industry experts both before and during their incubation period. The coaching covers retail design, marketing & communication, financial planning, kitchen and restaurant management, food safety, and a “Good Food” strategy promoting sustainable sourcing, seasonality, and food waste reduction..
