One of our most cherished collaborations is with Salvatore, a master pastry chef from the heart of Sicily, where almond trees have flourished for millennia, deeply embedding their cultivation into the local culture. The fruits of these trees have long been esteemed for their authenticity, inspiring recipes with intense and genuine flavors passed down through generations. In 2008, Salvatore realized his dream by establishing a small family-run business aimed at creating simple and authentic products. His ambition was rooted in a lifelong passion, having worked as a child in his aunt's pastry shop, where he learned the secrets of the noble art of Sicilian confectionery. His aunt, affectionately known as "Zza Sabbetta" in the village, imparted not only the technical skills of the trade but also a profound respect for tradition. Today, in a modest workshop in a small Sicilian town, Salvatore continues to craft almond pastries using a nearly millennia-old recipe handed down through generations. Each bite offers a unique taste capable of evoking cherished memories for the older generation and sparking the imagination of the younger, transporting them to a world as it once was.
